The North Melbourne community is getting something special this month: a three-day pastry and coffee takeover created in collaboration with Callé Bakery, known for their cult-favourite pastries and refined flavour work. For this pop-up, Callé and Rosso have partnered to create a limited-edition hero pastry, Le Café Latte—a layered, coffee-driven pastry built from Rosso’s single origin El Diviso Estate and Callé’s signature laminated dough.

This one-off pastry combines coffee crémeux, salted caramel, crushed roasted hazelnuts, and a layer of whipped vanilla bean cream, finished with cocoa powder and a latte-art motif. It’s available exclusively at Rosso Coffee Experience for the length of the pop-up or until sold out.

Across the three days, the full menu includes both the collab pastry and Callé favourites: cinnamon scrolls, Dubai chocolate pistachio croissants, berry twists, pain au chocolats, and spinach-feta-ricotta pastries. Everything is baked fresh and delivered each morning in limited quantities.

This event also sits alongside current Rosso initiatives: increased neighbourhood engagement, pop-ups that drive word-of-mouth, and experiences that bring new local foot traffic into the North Melbourne venue.
