Nestled in the lush landscapes of Huila, Colombia, this exceptional Caturra coffee is a collaborative masterpiece crafted by dedicated small-scale farmers. Huila's fertile volcanic soils and optimal altitude around 1800 meters above sea level create the perfect environment for cultivating high-quality coffee. The region's unique microclimate—characterized by warm days and cool nights—allows coffee cherries to mature slowly, enriching their natural sugars and developing a complex flavor profile.
The farmers embrace meticulous cultivation practices rooted in clean agriculture and sustainability. Handpicking only the ripest cherries ensures each bean reaches its full potential. Post-harvest, the coffee undergoes an innovative anaerobic natural process. Cherries are fermented in oxygen-free plastic tanks for 72 hours, a method that amplifies the beans' inherent sweetness and infuses them with vibrant notes of blueberry, cherry, and Turkish delight.
Following fermentation, the cherries are sun-dried for 15 to 20 days, turned meticulously three times daily to guarantee even drying.
