Originating from the esteemed Chelbessa Washing Station in Yirgacheffe, one of the largest towns in Gedeb, this coffee is a testament to the rich coffee heritage of Ethiopia. Sourced from nearly 500 smallholder farmers, each bean is carefully cultivated on tiny plots, interwoven with the daily lives and traditions of the local community. These farmers, many of whom grow coffee as part of a diverse agricultural system, deliver their cherries to Chelbessa for meticulous sorting, weighing, and processing.
Adhering to organic practices, the coffee is naturally processed, where cherries are harvested, rinsed, and laid out on raised beds for drying - a process taking between 8 to 25 days, influenced by the region's weather. This natural method contributes significantly to the coffee's unique flavor profile.
Yirgacheffe's fame in the coffee world comes from its blueberry-tasting coffees, a result of the lush, tropical climate and the multitude of microregions, each contributing to the coffee's complex profile.
