Colombia Manos Juntas

This exceptional coffee originates from the Manos Juntas Micromill, located in the Sotara area of Colombia's Cauca region. Operated and managed in partnership with Banexport, the micromill prioritizes streamlined processes for both producers and the export team. This particular offering was purchased in cherry form upon delivery to the mill on the day of harvest. Upon arrival, the Brix and pH levels were recorded before being placed in hermetic tanks for a five-day anaerobic fermentation. Nitrogen gas is introduced to stimulate the yeast and the Brix and pH are constantly measured to determine the stopping point of fermentation. The coffee is then subjected to 20°C temperatures to cease fermentation. As a natural processed coffee, the whole cherries are then “aged” in tanks for a period of five or more days before being dried on solar dryers for 30-45 days. The result is a unique cup profile that highlights the inherent characteristics of the Castillo varietal.

The Manos Juntas micromill model allows producers to focus on the health of their trees and harvesting ripe cherries. Producers sell their cherries by weight to Banexport and receive upfront payment for their crops, and at a price well above market value. The partnership’s goal is a quality coffee outcome through careful processing, drying, and storage. The resulting cup is consistently exquisite and well-balanced, a reflection of this unique collaboration. This particular coffee was roasted to highlight it's delicious profile, particularly when brewed as espresso.
