BACKGROUND:

This exceptional coffee comes from the renowned coffee producer, Mauricio Salaverria, and his farms in the Ahuachapan region of El Salvador. Ahuachapan, located in the western part of the country, is famed for its rich volcanic soil and ideal coffee-growing climate. The region's coffee farms are nestled within the Apaneca-Ilamatepec mountain range, a part of the larger Cordillera de Apaneca, providing a unique microclimate that nurtures the coffee plants and develops their distinct flavors.

The coffee is grown at an altitude of 1500 meters above sea level (MASL), where the cooler temperatures slow down the cherry maturation process, resulting in a denser bean with more complex sugars. This particular lot is a blend of Anacafe 14 and Bourbon varietals. Anacafe 14 is a newer varietal known for its disease resistance and cup quality. Bourbon is a heirloom varietal renowned for its sweetness and complexity. This coffee undergoes a natural process, meaning the cherries are dried whole with the fruit intact. This method imparts intense fruit-forward flavors and a heavier body to the coffee. The natural process, also known as dry processing, is a traditional method that requires meticulous attention to detail, ensuring the cherries dry evenly without fermenting. The resulting cup is a testament to the care and expertise applied at every stage, from cultivation to processing, offering a unique and memorable coffee experience.
