BACKGROUND: High up in Colombia's Nariño region, second-generation grower José Ignacio Gómez cultivates this Geisha coffee at Finca El Paraíso. Grown at 1900 meters above sea level, the farm's cool winds and rich soil create a great environment for growing quality specialty coffee.

This lot uses a method called the "Honey" process. After picking, the coffee cherries are peeled, but the sticky, sweet layer of fruit is left on the bean while it dries. The farm's custom solar dryers catch the natural crosswinds, allowing the coffee to dry slowly and evenly on raised beds. This careful approach helps lock in the coffee's natural sweetness.
