BACKGROUND: Discover our newest single origin from Yirgacheffe, a celebrated coffee-growing region in southern Ethiopia. Grown high in the mountains between 1900 and 2400 meters above sea level, these plants thrive in a climate of warm days and cool nights. This daily temperature shift slows the ripening process, allowing sweet and complex sugars to develop inside the bean. The coffee is cultivated by smallholder farmers in traditional gardens using organic methods. They grow a mix of local Heirloom varieties - indigenous plants that give Ethiopian coffee its unique, floral character.
After picking, the coffee is naturally processed. This means the whole cherries are dried in the sun on raised beds, rather than having the fruit washed off right away. Over several weeks, the cherries are carefully rotated to dry evenly, allowing the natural sugars from the fruit to soak into the seed. We have roasted this coffee for espresso to bring out its rich, syrupy body. Taste the bright sweetness of red plum, followed by delicate jasmine tea and a comforting chocolate finish.
